    Have you place the charcoals above the fan port? how would that be compared to this set up (opposite or away from the fan port)?

      the placement tries to reduce ash kick up (and it works) by not blowing directly into the coals. For the controller, it doesn’t really matter as it controls the air input in accordance with the temp

      @@ayyyebeeeen I have to admit though I never tried it - so it might work just as well. Another thought: it will always be a lot hotter below the coals and that’s probably not the best spot for a fan with a tiny motor and plastic blades :-)

    I just drilled out the rivet of my SJ and had the same problem of damaging the porcelain. The damper hole also was pushed out a bit. Others say the drill is to thin the perimeter of the rivet and then a needle nose to squeeze in the rivet.

    You totally lose almost all the juice from dry brining. When I grill a 250g steak entirely unprepared, the juice flowing out afterwards is enough to fill a fingercup. When it was dry brined for just an hour, its about half as much juice and if its been brined for 24 hours there is no juice at all. All steaks were done 100% identical: 1 minute per side at 400c (gas grill) and 3 minute rest at 80c, another 2 minutes at 60c (oven)

      no, it doesn’t. I do however use foil to cover the part of the coal grate that’s not covered by the slow’n’sear. This provides much better and directional airflow. The outlet of the blower is just below the coal grate and funnels downward. I position my SnS/baskets on the opposite side.

    Great video, My wife is from Nurnberg area and Schaufele mit kloss is a must every time we visit.. I've tried to recreate this dish at home using the bone end of a boston butt, seems to be similar. another great video would be to show how to make the famous schweine Steaks from the leftover portion of the shoulder after cutting the schaufele. pork steaks area another great german grill dish that we don't find too often in the USA.

      I used a simple nut, wanted a winged one and didn’t have one. So in real life, I fasten it maybe every two months? The carbon buildup helps ;-). Thanks for watching

      Thanks. Finding that use of the damper is loosening the nut more rapidly than I want. Might try a wing nut. Worried that a nylon-lined lock nut would not be ideal in such a hot environment.

    For anyone who doesn't currently HAVE a Kettle, I suggest the SnS Kettle made by SnS Grills; its price is competitive with the Weber MasterTouch, and it's basically a Weber with a much easier to remove / attach ash catcher, pre-installed probe and blower holes with covers, thermometer is on the vent side (where your food actually is), etc. I'd buy one if I didn't already have a Weber kettle.

    Hello there again; This is Tim Williams and I've been watching you on UA-cam on frying chicken 🐔 on the Weber Kettle Grill. So far you fried the Drumsticks and the thighs. Can you also fry the Breast or will it take longer to fry them? Please let me know.

      Hm ... I don't like breast that much. I'd fry breasts for about the same time but check internal temp a few minutes early. Breasts will go dry quickly, I usually only go to 65°C/150°F. BUT ... that's your choice, FDA recommends 165°F.

    I really enjoyed your video. I am a hardcore Weber Kettle guy. I have been looking into fan control and the new Spider 22 pellet adapter. I was leaning towards the fan but didn't find any videos that plotted long term cooking temps and fuel usage. You answered my question. I want to put a brisket or butt on and go to bed without adding fuel. Thank you for taking the time to shoot this video.

      Hey Doc (always wanted to say that). Glad this video helped you. From my experience, a fan controlled charcoal fire is more steady than a gas grill. The only other thing I wanted to try, but never did, was pellet smokers. But from all I see, you really shouldn't leave those unattended over night. So until someone proves me differently, I'll stick to charcoal :).

      @@hasenmann You absolutely leave pellet grills overnight, that's the whole point of them is to set it and forget it. The good ones have a very good PID technology that keeps the temps 5-10 degrees variation. They will spoil you, trust me.

    Flo and slow bbq , you have any idea the maximum amount of days you can dry brine I know I've done 4 days and the meat changed taste a bit was wondering if you think maybe 5 -7 days would result in spoilage. In asking more so if you have done this in the past or as an experiment. I think I'm at 3 or 4 days today on my steaks but I'd like to see what the max out is. But I am using american wagyu so maybe not test with this batch. Also my fridge is like 33F° most of the time goes up to 36F° and gets to 32F° when cooling.

    I would suggest using an automatic center punch so the drill bit won't walk from where you want to drill your pilot hole. I'll be adding one of these for my performer deluxe. Thx for the lesson.

    why gasket on lid and not on bottom part of kettle?

      I chose the lid because I was afraid the gasket might burn/smolder when using the grill without the lid. When I sear steaks on my SnS I get temps in excess of 750°C (1382°F). Honestly, I haven't tried it, but it just made more sense to me on the lid. Thanks for watching.

      I have the Weber Jumbo Joe and when I installed the gasket around the lid I now can not get my lid to lock down at all. Any solutions?

      Hey there, thanks for watching. I have never used a vortex but from what I saw, it might do the trick. Not sure. Vortex is not available anywhere near where I live, else I'd give it a try.
